Because I have no idea what to do on Sundays when I'm not working, there's no housework to do, it's not surfclub season, it's raining, and Willy isn't home.

Spinach and Feta Stuffed Bread
Made up a recipe for a delicious feta and spinach stuffed loaf over the weekend. Just another thing to try and empty the food out of our fridge before it goes bad. It was amazing, definitely making it again one day.
Dough
1/2c Beer
1/2c Warm Water
Tsp or so Yeast
3c Flour
Mix together, knead, leave to rise. I cheated and did mine in the breadmakers dough cycle.
Filling
A bunch of Spinach - wilted (don't forget to squeeze the liquid out).
Feta - few slices, as much or as little as you want.
Roll out the dough, put the filling down the middle in an even line, pull the dough over the top and work together. Bake at 180 for 30-40 minutes then let cool.
**Measurements and times are a rough guide - was making it up as I went along.

Paleo Brownies
Wanted to do some baking for a friend of mine and had some coconut flour in the cupboard. Yay for Paleo Brownies!
50g Coconut Flour
1/2c Coconut Sugar
1/2c Cocoa Powder
3 Eggs
1/2c Melted Butter
Preheat oven to 180 degrees. Combine all ingredients - make sure there are no lumps!! Pour into a greased tin - I doubled this recipe in order to fill the tin to two thirds. Bake for 30 minutes.
You should allow the brownies to cool prior to cutting - I was in a rush and didn't, they survived so it isn't a hard and fast rule!
